GET YOUR TURKEY A-GAME ON… 

  1. Give yourself plenty of time for the turkey to defrost…
    We reckon 2 days in the fridge for a small bird, and 3 days for a big one.
  2. Fire up the oven… then turn it down a bit…
    Crispy skin is ace… but cook your bird slow and steady, then crank it up for the last 10 mins to get that skin toasty.
  3. Let it rest… 
    Remember to allow 15-20 minutes for the turkey to mellow before you carve and serve it.
  4. Use a meat thermometer…
    You’re aiming for 84°C… remember to probe the thickest, meatiest bits. 
  5. Don’t skip the gravy!
    Turkey pan drippings are liquid gold… put these magical bits to work and use them as a base for your gravy!
