Potato & Bacon Bake

This is one of those comfort dishes that is super-flexible depending how fancy you want to make it and what ingredients you’ve got floating around in the fridge. Change up the cheese for some mozzarella or a little sharp cheddar… sub the potato for kumara or use whatever fresh herbs are thriving in your garden. Easy peasy!

    garlic, cloves
  • 1 Teaspoon
    sea salt
  • 1 Cup
    cheese, grated
  • 2 Kilograms
    potatoes, washed and very thinly sliced
  • 1 Tablespoon
    olive oil
  • 4
    Freedom Farms Free Range Eggs
  • 4 Slices
    Freedom Farms Bacon, finely chopped
  • Chives, chopped


  1. Preheat the oven to 190°C.

  2. Mix the eggs, milk, garlic, salt, bacon and 3 Tbsp chopped chives. Set aside.

  3. Using 1 tablespoon of oil, oil a 20cm square ovenproof dish. Layer one third of potatoes evenly into the dish and pour over one third of the egg mixture, making sure bacon and chives are evenly distributed. Repeat with the remaining two-thirds of the potatoes and egg mixture. Sprinkle the cheese evenly on top.

  4. Cover loosely with foil and place in the oven for 45 minutes (make sure the foil is not pressed down against the cheese... that won't work out well!). Uncover and bake a further 15 minutes until the potatoes are tender and everything is bubbling and golden.

  5. Remove from the oven and serve as a side with roast chicken or steak or as a meal in itself with salad. YUM!
