Many of us hold some degree of hostility towards the humble brussels sprout… if you ever had a nana who insisted on serving them boiled its likely not unfounded!
This recipe capitalises on the silky texture of finely sliced sprouts… and the addition of Freedom Farms bacon, cranberries and pecans we reckon you’re only a family friendly dish!
Place bacon in large nonstick pan over medium heat. Cook until the bacon is crispy. Remove from the pan and place on a paper towel to drain. Chop bacon roughly into small pieces.
While the bacon is cooking, toast the pecans in a small pot over medium heat. Cook until light golden brown, taking care not to scorch them... you don't want them to taste bitter.
Return the bacon pan to the heat and add the butter and diced onion. Cook, stirring, until it being to soften... about 2 minutes. Add the Brussels sprouts and cook, stirring frequently, until they are just tender, but still bright green (3 to 4 minutes).
Remove the pan from the heat. Add toasted pecans, cranberries, and bacon. Stir to combine. Season to taste with salt and pepper and serve. YUM!
